12 Sweet Pie Recipes for Summertime!

I love pie. Don't you guys love pie?

Our city recently got a diner (a real one!), and they serve... you guessed it!... pie! :) We had dinner there, and the pie (which we got to go) was divine!

Which reminded me, that my Summer Bucket List mentioned making two new pies... I need to get on that! While looking for ideas, I made this list of 12 pie recipes that I found on Pinterest! While great at any time of year, they would be especially fantastic for summer!














1) Apricot Raspberry Galette - Gluten free!
2) Patriotic Pie - While a bit late this year, this pie would be lovely for the 4th!
3) Peach Pie - Peach is my favorite!
4) Strawberry Peach Tart - I have yet to eat or make a strawberry pie! Maybe it's time?
5) Cherry Hand Pies - Cherry is KC's favorite!
6) Blueberry Peach -  or try this one from Becca @ Ladyface - It's gluten free & vegan too!
7) Old Fashioned Banana Cream Pie - This is legit, no pudding involved!
8) Scarlett O'Hara Raspberry Pie - adorable name, may just make me try it!
9) Four Berry Pie -Mmmm...
10) Blackberry Crumb Pie - Crumble topping is hard to resist.... and super low maintenance!
11) Berry Apple Rhubarb Pie - Rhubarb is also a pie flavor I have never eaten or made!
12) Meyer Lemon Chess Pie - I have never had a chess pie.. but this looks delicious!

Is your mouth watering?

Perhaps you are feeling like pie is more effort than you have time for... try this no-fail fruit crisp recipe. My favorite combination so far is raspberry peach! I love how easy it is: put fruit in pan, top fruit with crumble, bake, eat... Top it with ice cream if you are feeling really crazy. And then eat the leftovers for breakfast... ;)

National Pie Day 2014! // Ideas & Recipes


National Pie Day is a big deal for us.... yet it ALWAYS sneaks up on me... : / but... tomorrow January 23rd is the day! 

In honor of the day, and really in honor of pie, I make a pie on the 23rd every year. This will be my 4th year!

So far, since I am still a fairly new cook.. I have been trying to test out new recipes every year. This year is no different, but I won't be giving away my recipe just yet! :)


Instead, I thought I would leave you a mouth-watering pie post, with links to recipes that I have tried in the past! I hope that you will feel inspired to make your own pie tomorrow, or really anytime this week, because pie makes people happy. Make a pie and share it with those you love!


Individual sized chocolate pies with meringues. The meringues turned out perfectly, and win/lose we weren't stuck with 3/4 a pie to eat all by ourselves... :) 




 This recipe also made my top 12 of 2012 recipes! So it is very good in my opinion! :) Kyle had never had a cream pie before, but he loved it! This recipe really wasn't too hard but was definitely worth any and all effort put into it! Crust recipe and directions also included in the post!


A nice cherry pie. It uses both frozen and dried cherries so it has a mix of sweet and tart, which is nice for those of us who aren't always the biggest fan of tartness. This is Kyle's favorite. Crust recipe and directions also included in the post!


This pie is so delicious. I always make it for either Thanksgiving or Christmas, but it doesn't have to be seasonal. It uses dried cranberries so it can really be made whenever you want it! Because the cranberries are dried they are much sweeter than fresh ones. So if made with mild or sweet apples it is actually quite sweet! If you like tart go for a green apple, like Granny Smith and you will have a sweet/tart combo! It is also great with a crumble crust, recipe also at the above link. Crust recipe and directions also included in the post!


This pie was not my favorite, but Kyle and his parents loved it! If you like blueberry pie, you will probably like this pie. It was very easy! What I love most about it are the colors! :)


While for some this pie is seasonal, there really isn't any reason it needs to be. It is yummy all year round. I just used the recipe on the can of pumpkin.

National Pie Day Pie 2013!

January 23rd was National Pie Day!


This year I decided to make mini pies. We got 4 little pie plates {4 inch} as wedding gifts, so I decided to try them out!

One of my friends from Miller, Joyce, gave us a wonderful cookbook called Small Batch Baking, which is perfect for just the 2 of us! 


I found the recipe for mini chocolate meringue pies in it, and it turned out being really yummy and easy. I won't lie I was really intimidated by the meringue. It is so easy to mess it up, but they actually turned out really well! I was really pleased.

They were yummy, simple and perfectly portioned for two.

Mini Crusts & Chocolate Meringue Pies


Borrowed, Adapted and Enjoyed from Small Batch Baking

Crust Ingredients

1/2 cup all purpose flour
1/4 tsp. salt
1/4 tsp. sugar
3 T. unsalted butter, cold, cut into small pieces
4 tsp. ice water, more if needed
unsalted butter, at room temperature for greasing pans {if using tart pan, or jumbo muffin pans, I did not use for pie plates}

 Filling Ingredients

1/3 cup of sugar


1 T. + 3 tsp. cake flour
1 T. unsweetened cocoa powder
pinch of salt
1/3 cup of whole milk
yolk of one large egg 
1 oz. of bittersweet or semisweet chocolate {I used semi sweet}
1 T. unsalted butter 
1/4 tsp. vanilla extract 

Meringue Ingredients:

White of large egg used in filling @ room temp

1/8 tsp. cream of tartar
1/8 tsp. of vanilla extract
pinch of salt
1 1/2 T. sugar

Pans Required

2 mini pie plates, 1 jumbo muffin plan or 2 mini tart pans + a cookie sheet, food processor {or you can do the crust by hand with the same general instructions}

Crust 

1) Place dry ingredients in the food processor and pulse to blend.

2) Space out pieces in food processor and pulse about 15 times or until the lumps of butter are about the size of peas.
3) Sprinkle the ice water over the flour and process lightly until small, moist clumps of dough being to form. Add up to 2 tsp. more ice water if needed to wet the dough.
4) Tear off two sheets of waxed paper and divide the dough into 2 equal pieces. Flatten each ball of dough into disks and wrap in the pieces of waxed paper. Refrigerate for 30 minutes.
5) Press the dough into the bottom of two ungreased pie pans or greased jumbo muffin cups, or greased mini tart pans. Prick the bottom of the crust with a fork several times and put in the freezer and chill for 15 minutes.
6) After chilling the dough, place in a 375 degree oven and bake for 4-5 minutes. 

Preheat oven to 350 degrees Fahrenheit.

Filling


1) Put the dry ingredients in a sauce pan and whisk together. Whisk in the milk and egg yolk and place over medium heat and whisk constantly until thick and bubbly.
2) Remove pan from heat and add butter and chocolate. Replace over heat until butter and chocolate have melted, stirring constantly. 
3) Remove from the heat and mix in the vanilla. Keep warm on the stove. 

Meringue {prepare immediately!}


1)  Place the egg white in a bowl or kitchen-aid mixer bowl and beat on medium speed until it is foamy. 
2) Add the cream of tartar, vanilla and salt and increase mixer speed to high and beat until soft peaks form.
3) With mixer running on high speed, slowly add the sugar. Beat until stiff peaks form. 
4) Add the filling evenly to the pie shells and mound the meringue to the top with high peaks. Seal the meringue to the edge of the pan. If using jumbo muffin pans fill other muffin spots with water so that your pan does not warp while baking.
5) Bake until golden brown, 15-17 minutes.
6) Remove and allow to cool completely away from drafts. If using tart or muffin pans remove from pans to serve.

I was thrilled to get a comment on my instagram picture from a {I assume} seasoned pie maker saying that my meringue looked perfect! It made me feel really good, especially since I was so nervous! Sometimes it just works out. :)

Ideas for National Pie Day 2013!

I love pie a lot. I would choose pie over almost any other dessert, if it is good pie {i.e. Homemade}. Needless to say I get really excited in January because it contains National Pie Day! 

National Pie Day is always January 23rd.

Happy Thanksgiving + Pumpkin Pie {recipe #66}

Happy Belated Thanksgiving!

I made my very first pumpkin pie this year! 

I was nervous, but it turned out really awesome actually!


I just used the recipe on the can of pumpkin and it was wonderful. 

I also made my favorite fall pie Apple Cranberry, with a crumble crust. 

Coming Soon: "12 Things I am Grateful For", because being grateful is not limited to Thanksgiving or even November!

Blueberry Peach Pie {recipe #58}

One of my summer bucketlist goals was to try a new pie recipe. This is the one that I chose.

Blueberry Peach Pie


Borrowed, Adapted and Enjoyed from The Farm Chicks in the Kitchen.

Ingredients:
One recipe of double crust pastry OR store bought pie dough
5 cups of sliced fresh peaches
1/2 cup fresh blueberries or huckleberries
3/4 cup sugar
4 T. all purpose flour
1/2 tsp. ground cinnamon

1) prepare the double crust pastry according to directions (allow time to let chill for at least 2 hours). OMIT step one if using purchased prepared pie crust.
2) Heat oven to 400 degrees F. Roll out first crust and place in pie pan. Cut shapes or make lattice design out of second crust if desired. 
3) Toss the peaches, blueberries, sugar, flour and cinnamon together in the large bowl. Pour the filling into the prepared pie pan. 
4) Lay top crust in desired fashion.
5) Let pie chill in fridge for 10 minutes.
6) Bake until the fruit is bubbly and the crust is golden brown, about 50-55 minutes. Take out and let cool.

Enjoy!

 This pie was not my favorite recipe, but it was definitely unique and tasty. I am not a huge blueberry (in) pie fan so that really explains it. Kyle and his parents LOVED it though... so it just depends on your personal pie preferences. :)

National Pie Day 2012 Pie/Recipe #8

January 23rd was National Pie Day.

This year I wanted to try something brand new. {I love my Heart's Desire Cherry Pie and Cranberry Apple Pies but I wanted to add another favorite to our recipe box!}
I was having trouble deciding what kind of pie to make though. I finally asked Kyle "Do you like banana cream pie?" He said "I've never had it." To which I exclaimed, "Really?!? I have to make it then!" 

I am SO glad I did. 

For one, it was my first cream pie. 

and two, Kyle LOVED it. :) We had a piece each and then split one the first night. Then every night after that we each had one until there was only one left and Kyle finished it for breakfast the next morning! :)
So, here is the recipe!

Old Fashioned Banana Cream Pie

{Borrowed and Enjoyed from: Easy as Pie by: Benjamin Darling, A really cute book!!}

Ingredients:

1/2 recipe pie crust {baked blind, I will explain!}
OR
1 crumb crust

1/2 cup sugar
5 T flour
1/4 tsp. salt
2 cups milk
2 egg yolks {slightly beaten}
1 T butter 
3 ripe bananas

Blind Baking:

1) Make 1/2 my double crust pastry or all and freeze half for another pie later!
2)Roll out dough and press into 9-inch pie pan.
3) Dock {prick a few holes} in the crust. OR fill with pie weights {but who really has pie weights?}
4) Bake at 425 F for 15-18 minutes.

Filling:

1) Combine dry ingredients in a double boiler. {or if you don't have one, like us... put a glass/ceramic mixing bowl on top of a boiling pot of water}. Add milk slowly, mixing well. 
2) Cook over rapidly boiling water until well thickened {a while, be patient} stirring constantly.
3) Cook 10 minutes longer after thickening, occasionally stirring.
4) Stir a little bit of the mixture in the double boiler into the lightly beaten eggs. Then put egg mixture into double boiler mixture. BEAT VIGOROUSLY! :) 
5) Cook for 1 more minute.
6) Remove from heat and mix in butter and vanilla.
7) Let cool! {on the counter, then once the bowl is less hot put it in the fridge to chill}
8) Peel and slice the bananas into the bottom of the pie shell {or 1/2 in the bottom and layer with filling}. Cover immediately with cooled filling. Layer {if you chose to} and/or top with whipped cream/coolwhip. 

Enjoy! :)


Note: I would let it all chill in the fridge again for a little while to let it become a little more cohesive. You can also top with fruit or banana slices, which I tried to do... haha but ran out of banana :) :)

Our Love Pie on National Pie Day January 23rd 2011!!

Yesterday was National Pie Day! Hooray! 

So I thought I would write a really short post about our love pie we made. :) hehe I just call it that because Kyle and I made the pie together. ;) We made the Heart's Desire cherry pie and decided to put hearts a whale and a shark on the top crust.

National Pie Day January 23rd 2011!!

I love pie. Its delicious. Its pretty. Its fun to make. I love it. All different flavors and fillings, different crusts and designs. I love pie!




Apple Dried Cranberry Pie. {Recipe link Below!}

At some recent point in my life I decided that I wanted to learn how to make pies from scratch. Not sure why but I think it was something having to do with preserving the past and learning how to do things that people forget to care about. Pie making is work! Fun work for me, but most people will opt for the store bought crusts and fillings, or a frozen or pre-made pie. I'll tell you what, its not the same! Its also extremely rewarding to make an entire pie yourself!

Here I will share pictures and recipes of my 2 favorite pies to make!

But first! The basic double crust recipe!
Double Crust Pie Pastry

(makes crust for one double crust pie, or crusts for 2 single crust pies (with crumble toppings or something))

2 cups all purpose flour
1/4 tsp salt
5 T of cold butter, cut into small pieces
2/3 cup cold vegetable shortening, cut into small pieces
5-7 T of ice water 

1) Combine flour and salt in a large bowl, cut in butter, using pastry blender, two knives or forks. (I like to use forks best). Cut in until crumbs are no larger than peas. Cut in shortening as you did the butter until the mixture resembles coarse crumbs.
2) Add ice water 1 T at a time, mixing with a fork until the dough holds together but is not sticky. 
3)Divide dough into 2 equal parts. Shape each part into a round disk about an inch thick. Refrigerate in plastic bags or plastic wrap for at least 2 hours before using. 
4) When ready to use roll disk out thinner until it covers the bottom and sides of the pie pan. 

Heart's Desire Cherry Pie

I forgot the cornstarch in this one (OOPS!) It was delicious but too watery. :)

8-10 servings 

Double Crust Pie Pastry

Filling:

4 cups of frozen pitted tart cherries (thawed and drained)
1/2 cup dried cherries 
1 1/2 cups of sugar
1/3 cup all purpose flour
1-2 T of cornstarch (IMPORTANT!)
1/8 tsp ground nutmeg
pinch of salt
1 T butter cut into pieces
milk (for brushing on top layer of crust)

1) Roll half the double crust pie pastry on floured surface into a circle 1 inch larger than inverted 9 inch pie pan. Ease pastry into pan and flute edge. Roll remaining pastry into scant 1/4 thickness; cut into hearts (or any shape) using cookie cutters. Refrigerate pastry and hearts while preparing filling.
2) Mix cherries and dried cherries in large bowl; sprinkle with combined sugar, flour, cornstarch, nutmeg and salt; toss. Spoon fruit into pastry; dot with butter.
3) Brush edge of pie pastry with milk. Arrange hearts on top of pie; brush lightly with milk. Lightly sprinkle with sugar. 
4) Bake at 375 degrees for until crust is browned and juices are bubbling, about 1 1/4 hours. Cover the top and sides with aluminum foil if they are getting too brown. Cool on wire rack. 

Serve warm with Vanilla Ice Cream. 


For Kyle's Birthday Last Year I made him this shark pie. :) {and I didn't forget the cornstarch!}
This pie is absolutely delicious and I don't usually favor cherry pies. I tend to make this for Valentine's Day, Kyle's Birthday or our anniversary, who knows I may even make it tomorrow!

*Crumble Crust*
If you opted to do a crumble crust topping, cut the pie pastry recipe in half. To make the crumble topping I like to mix equal parts of oats and brown sugar, add some cane sugar and then cut in some butter. Then I sprinkle it on top and bake as the recipe above says :) {this was a big hit this thanksgiving}


Clearly it was a hit because this is all that was left! :)

I love to make this pie during Thanksgiving and for any other fall occasion. But it is good at any time of year :) It is delicious and not over-baringly sweet. The leftovers make good breakfast as well!
